👩‍🍳 Makes 4 perfectly portioned cookies (because sometimes you need just enough sweetness).

Small-Batch Chai Spice Cookies (Regular Flour)
Makes 4 soft & chewy cookies
Ingredients
¼ cup + 2 tbsp all-purpose flour
⅛ tsp baking soda
Pinch baking powder
Pinch salt
¼ tsp ground cinnamon
⅛ tsp ground ginger
1⁄16 tsp ground cardamom (just a pinch)
Pinch ground cloves
Pinch ground allspice
2 tbsp unsalted butter, softened
2 tbsp brown sugar (packed)
1 tbsp white sugar
1 small egg yolk (discard white)
¼ tsp vanilla extract
Optional coating: 1 tbsp white sugar mixed with a pinch of cinnamon

Instructions
Preheat oven to 350°F (175°C). Line a small baking sheet with parchment.
Mix dry: In a small bowl, whisk together flour, baking soda, baking powder, salt, and spices.
Cream butter & sugars: In another bowl, beat butter, brown sugar, and white sugar until light and creamy.
Add yolk & vanilla: Stir in egg yolk and vanilla until smooth.
Combine: Add dry mix to wet mix and stir just until no flour streaks remain.
Shape: Divide dough into 4 balls. Optional: roll in cinnamon-sugar. Place 2 inches apart on baking sheet.
Bake 8–10 minutes, until edges are set but centers are slightly soft.
Cool on the pan for 5 minutes before serving.
